Yes, yes and yes! Even after 4 days in the fridge, this recipe is an absolute stunner. The reason this recipe worked great for meal prep is because we had plenty of pumpkin sauce; so, even after being packed in airtight containers overnight, the pasta was still full of sauce. And while it is best to serve this pasta right away after cooking, it can also be kept for up to 4 days in the fridge when stored in airtight containers.
Given that pumpkin and carrots can be quite filling, it may be important to note that the pumpkin pasta is heavier than the typical pasta dish. So, don't be surprised if you eat this recipe for lunch or dinner and feel full right away. We didn't mind this at all because the meal left us with a satisfying fullness rather than still feeling hungry and uneasy.
